Perfect Mojito perhaps?
In an effort to stave off the chill, I made sure mojitos were concocted last evening to go along with a tropical chicken dinner.
I think I found the key ingredient for the perfect homemade mojito. Mint infused simple syrup.
recipe:
1 cup white sugar
1 cup water
Heat until sugar is dissolved in water, slow simmer, no boiling!
Once sugar is dissolved, remove from heat and let sit for a few minutes. During this time chop up mint. It's tough to measure, but I'd say about 2 - 3 tablespoons, about 3 or 4 sprigs. The more the mintier!
Add mint and let steep (like tea) for about 10 minutes.
Strain simple syrup removing mint, you should be left with a slightly green tinged liquid.
My Mojito recipe
In a hurricane glass
3/4 shot mint syrup
1 shot fresh lime juice
5 -6 mint leaves
mix this around
Add ice (about 5 cubes)
1 shot rum (I prefer Appleton's or Myer's)
1/2 shot Bacardi Limon
Fill with seltzer
Adjust mint, lime and simple syrup to taste.
Enjoy!

I tend to like things very sour, but the simple syrup smooths this out nicely so while it has a bite, it's not too sour. I should add that lately I've been using Mount Gay as my base rum, and I add add a touch of Cruzan or Goslings Black as well as the Bacardi Limon.

I just use crushed ice, mint and limes in a glass and muddle. Then add 2 shots of white rum mix and top with sparkling water (flavored works too but note required). no sugar needed. If you get in a pinch I would go for the Hemmingway classic Mojito. A glass-ice-rum-limes. Lately I have been using Mount Gay with a dash of Bacardi Limon and Cruzan or Goslings Black and have used Appleton's as well. I'm just using Cruzan Light or White Rum. I don't like to add too much spice with my rum to keep it clean and to be able to taste the other ingredients crisply and clearly. Also is it made on a US Caribbean Island which couldn't hurt either. Or maybe it just reminds me of my trips th St John.

Light Cruzan is hard to find here for some reason. The usually only carry the flavored stuff. I have been using Bacardi, I am kinda partial to it. I played college baseball at the University of Miami and one day before a game, Tito Bacardi through out the first pitch. Mojito (pronounced IPA: [m?'hi?.to?] (English) [mo'xi.to] (Spanish)) is a traditional Cuban cocktail which became popular in the United States during the late 1980s, and has recently seen a resurgence in popularity.
A mojito is traditionally made of five ingredients: spearmint, rum, sugar (traditionally sugar cane juice), lime, and carbonated water. Its combination of sweetness and refreshing citrus and spearmint flavors are intended to mask the potent kick of the rum, and have made this clear cocktail a popular summer drink.
To make a Mojito, juice from a lime is added to sugar and mint leaves in a tall glass. The mixture is then mashed repeatedly with a muddler. Crushed ice is then added, followed by rum and topped off with club soda.
Bacardi Mojito (say 'mohito,' and enjoy!)
An easy mojito recipe to liven up your evening:
1.5 oz BACARDI Rum
12 fresh spearmint leaves
1/2 lime
7 oz club soda
2 tbsp. simple syrup
(or 4 tsp. sugar)
Cuban Mojito recipe
the original authentic recipe from Havana Cuba
1 teaspoon powdered sugar
Juice from 1 lime (2 ounces)
4 mint leaves
1 sprig of mint
Havana Club white Rum (2 ounces)
2 ounces club soda
There are countless recipes for the Mojito (prounced moh-HEE-toh), but this version is for the one Hemingway himself enjoyed at the Mojito's place of birth: La Bodeguita del Medio in Havana, Cuba. If you are throwing a Cuban theme party (Havana night themed party), plan on serving mojitos.
Place the mint leaves into a long mojito glass (often called a "collins" glass) and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime. Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device pictured below, though you can also use the back of a fork or spoon if one isn't available). Add ice (preferably crushed) then add the rum and stir, and top off with the club soda. Garnish with a mint sprig
Mango Style
1 1/2 oz Cruzan® mango rum
3 oz club soda
4 mint leaves
1 lime wedge
Muddle the mint leaves and lime wedge in the bottom of an old-fashioned glass. Add Cruzan mango rum and club soda as above or adjusted to taste. Add ice cubes, and serve.
Blackberry Mojito
1 -1/2 oz Bacardi Superior rum
1 oz simple syrup (see recipe)
3 or 4 fresh blackberries
3 fresh mint leaves
3 lime wedges
soda
• In a mixing glass, muddle mint, blackberries and limes.
• Add simple syrup (see recipe) and rum.
• Shake and pour into highball glass.
• Top with soda.
• Garnish with sugar cane and fresh mint sprig.
Bacardi Peach Red Mojito
1 tablespoon simple syrup
6 large mint leaf
3 ounces Bacardi peach red rum
1 dash lime juice
1 dash sour mix
Directions
Muddle mint leaves with simple syrup in cocktail shaker.
Add peach rum, lime juice and sour mix.
Add ice cubes and shake until blended.
Serve in martini glass and garnish with slice of fresh peach.
Strawberry Mojitos
18-24 fresh strawberry
1 bunch fresh mint
12 tablespoons brown sugar
3 lime, wedged
24 ounces captian morgans rum
Directions
place 2-3 strawberries, 3 mint sprigs, and 2 tablespoons brown sugar in a shaker.
squeeze 3 lime wedges over glass and then drop in wedges.
mash together with a spoon.
add ice and rum.
cover and shake.
strain into a cocktail glass and garnish with a strawberry.
Watermelon Mojitos
Ingredients
5 cups cubed seeded watermelon
1 cup sparkling water, chilled
3/4 cup white rum
1/4 cup chopped fresh mint
1 (6-ounce) can frozen limeade concentrate, undiluted
Mint sprigs (optional)
Lime slices (optional)
Preparation
Arrange watermelon in a single layer on a baking sheet; freeze 2 hours or until completely frozen.
Combine frozen watermelon, sparkling water, rum, mint, and limeade in a blender; process until smooth. Garnish with mint sprigs and lime slices, if desired. Serve immediately.
