Long Island Ice Tea & More Summer Drinks
Raspberry Long Island Ice Tea recipe
Scale ingredients to servings
1 oz vodka
1 oz rum
1 oz tequila (Cabo Wabo)
1 oz gin
1 oz triple sec
1 1/2 oz sweet and sour mix
1 oz Chambord® raspberry liqueur or Splach of Coke for Regular Long Island....
Pour all ingredients over ice in a shaker, and shake three to four times. Pour into a collins glass and garnish with a lemon wedge.
Just for the record, I would like to make sure everyone knows that there is no tea is a Long Island Iced Tea. It is a very strong, alcoholic cocktail. But since so many people are looking for Long Island recipes, I thought I should oblige. The basic recipe is just equal portions of vodka, gin, triple sec, rum and tequila. Add some Cola .. Close variants often replace the sour mix with sweet and sour mix or with lemon juice, and the cola with actual iced tea. Some chain restaurants even take the liberty of substituting brandy for the tequila. Some claim that the drink, like most cocktails, was invented during the Prohibition era, as a way of taking the appearance of a non-alcoholic drink (iced tea). A lemon slice is often added to enhance this resemblance
Version 1 (traditional)
1/2 oz vodka
1/2 oz gin
1/2 oz triple sec
1/2 oz light rum
1/2 oz tequila
2 oz sour mix
Mix with ice and then top with Cola.
Version 2
2 cups ice cubes
1 ounce vodka
1 ounce gin
1 ounce white rum
1 ounce white tequila
1/2 ounce triple sec
2 tablespoons freshly squeezed lemon juice
1/2 cup Cola, or to taste
2 lemon wedges
Shake everything but cola and wedges in a cocktail shaker. Pour into glasses and top with Cola, and a lemon wedge.
Version 3
3 oz Triple Sec
1 oz Light Rum
1 oz Dark Rum
1 oz Vodka
1 oz Gin
1 oz Vermouth
3 oz Sour Mix
6 oz Cola
1/2 oz Tequila
Ice
Combine everything and serve with ice.
Pineapple Mojito Gelatin Shot
12 fresh mint leaves
3 tablespoons fresh-squeezed lime juice
3 tablespoons pineapple juice
1 box lime gelatin
1 box pineapple gelatin
1 teaspoons sugar
1 cup boiling water
1/4 cup light rum
10 to 12 small plastic cups or shot glasses
Bruise the mint leaves in the bottom of a cocktail shaker. Add the lime juice, pineapple juice and shake the 2 together. In a medium bowl combine the lime and pineapple gelatins, and the sugar. Stir in the boiling water and whisk until the sugar dissolves. Stir in the rum and pour into the plastic shot glasses. Refrigerate until set, about 3 hours. Enjoy!
BR's White Sangria
1 Bottle: MOSCATO D`ASTI
1 Bottle: Resling Wine
1 cup: Peach Snapps
1 Cup: Grand Marnier
1 Cup: Triple Sec
1 Cup: Pineapple Juice
Some Blackberries, Rasberries, Strawberries, grapes, oranges, white peaches,put all in bottom of gallon jug, pour mixture over leave alone for 1 day. Add a little 7UP or Club Soda to each glass when serving for bubbles. Drink and be happy...
Red Sangria
1 orange, sliced
1 lime, sliced
1 apple, cored and sliced
1 bottle red wine
3 cups white rum
1/2 cup orange flavored liqueur, recommended: Cointreau
1 cup orange juice
1/2 cup pomegranate juice
3 tablespoons sugar
1 quart club soda, to taste
To a pitcher add orange, lime, apple and cover with red wine, rum, orange liqueur, orange juice, pomegranate juice and stir in sugar. Chill in the refrigerator. When ready to serve top off with club soda, to taste.

Tokyo Tea
1/2 ounce each
vodka
gin
rum
tequila
triple sec
melon liqueur
top off with sour mix and shake
serve over ice
Blue Bo Bo
(this one I invented when I was making a Tokyo Tea and substituted blue curacao for triple sec (both are orange liqueur) and accidently grabbed the creme de menthe instead of melon liqueur) My husbands favorite, he named it
1/2 ounce each

blue curacao
creme de menthe
top off with sweet and sour shake
serve over ice

The traditional top shelf Long Island Iced Tea is one of my personal favorites!
Variations on it can be quite good too.
There is one particular bartender up here in the high country who makes the best damn Long Islands I've ever tasted.
The drink itself gets straight to the point. Instant gratification!

I just bought this new stuff called Pama. It is actually excellent on the rocks, but they do have a martini recipe also...

Cherry Gin-gria
Ice cubes
2 ounces cherry syrup
2 ounces gin
5 to 6 ounces club soda
1 ounce red wine
Maraschino cherries
Fresh or frozen raspberries
Fill a tall glass with ice cubes. Pour in the cherry syrup and the gin; stir to mix together. Lighten the drink with a generous splash of soda. Float a layer of red wine on top by pouring it over the back of a wide, flat spoon. (Don't worry if it doesn't float; it tastes great either way.) Drop a few maraschino cherries and raspberries into the glass. Drink.
Tomato Martini
Ice cubes
1 1/2 ounces gin
1 teaspoon dry white vermouth
3 ounces Tomato Water, recipe follows
2 tablespoons tomato based vegetable juice (recommended: V-8)
1/2 lemon, plus a twist for garnish
Couple drops Pernod, optional
Salt and freshly ground black pepper
Hot sauce
Garnish: Olive, cherry tomato, and cocktail onion on a swizzle stick or toothpick
Fill a cocktail shaker or small pitcher with ice cubes. Add the gin, vermouth, tomato water, vegetable juice, and a healthy squeeze of lemon juice. Add a couple drops of Pernod if desired--it adds a nice background flavor, but more than 1 or 2 drops will overpower the drink. Season with salt, pepper, and a dash of hot sauce.
Cover and shake vigorously until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Strain into a chilled cocktail glass. Add the olive, tomato, and onion garnish. Drink.

1 (28-ounce) can tomatoes
1/2 teaspoon kosher salt
Pinch sugar
Puree the tomatoes and their juices with the salt and a pinch of sugar. Line a small sieve with a coffee filter and set over a bowl. Pour the tomato into the sieve and set aside to strain, about 3 hours. Discard the solids and save the tomato liquid. Refrigerate until ready to use.
Peach Cobbler
Crushed ice
2 to 2 1/2 ounces rye whiskey
2 1/2 ounces peach nectar
Dash bitters
About 5 wedges frozen peaches, halved
3 to 4 fresh mint leaves, roughly chopped
1 lemon wedge
Fill a large wine goblet with crushed ice. Gently muddle the rye, peach nectar, dash of bitters, peaches, mint, and a squeeze of lemon juice in a cocktail shaker. Pour over ice and serve cold.
Note: At first, the rye can pack a real punch; as the ice and fruit melt, they mellow it into a wonderful summer drink.
Electric Lemonade
1 1/2 oz. Vodka
1/2 oz. Blue Curacao
2 oz. Sweet and Sour Mix
7-Up or Sprite
Lemon Slice
Maraschino Cherry
Combine all the ingredients in a blender and blend for 15-20 seconds until smooth. Pour over a highball glass filled with ice and garnish with a lemon slice and maraschino cherry.
