Cook four pieces of bacon in a cast iron skillet.
While the bacon is cooking, preheat the oven to the temp on the side of your white cornmeal pkg. 325 is what mine is...
2 cups white cornmeal mix.
2 cups buttermilk.
2 eggs.
1 cup of shredded sharp chedder cheese
1-2 Tablespoons of diced jalapeno's
1 small can of cream style corn
1 good pinch of baking soda. (use this to help lift the extra liquid you are using)
Remove the bacon after it is cooked and pour a tbl spoon or so of the grease into the above concoction and stir.
Now pour the concoction into the hot bacon grease in the skillet.
25 minutes till perfection. Eat the bacon while you're waiting.
