Anyone have a good recipe for asparagus? Just wondering how some of you cook it?

The few times I've tried this, I used just a little bit of water along with not so much of the heavier EVOO. Still comes out great!!buffettbride wrote:Saute it in EVOO with onions and garlic and top with fresh parmesan at the end.
Use leftovers in an omelet the next day.

Note to self: Don't invite Penny to next year's Asparagus Festival.SMLCHNG wrote:Sorry, no such thing as good asparagus
Deep fried asparagus.....yuuuuuuuuuuuumy! Grilled, stir fried, it's all good.
I had a coworker who used to broil it with balsamic vinegar and garlic and top it with fresh parmesan...soooo good. And one time I wrapped it in proscuitto and grilled it on my grill pan, then covered it with a balsamic glaze. Good, but a little too salty...I think it was topped with bleu cheese.

) ... nope, not so much. Makes it worse that many many years ago, I worked for my MIL (extra $$) and her catering business. One lady we served it to for a dinner party , and wanted it peeled (tato peeler)before serving. I spent 2 hours doing that.
After 2 hours of peeling asparagus I think I might have shoved the peeler up that lady's nether regions.

My mom does a warm salad of asparagus, sliced mushrooms and tomatoes with garlic salt that's super easy- equal parts of all three, microwave the asparagus for 2 mins (all covered), add mushrooms, microwave for 2 mins, add tomatoes and microwave for 2 more minutes.
She'll also microwave it with bagged mozzarella cheese. It's not high end but it is yummy.
It's one of my favorite veggies when I can get it from a farm. I'm very happy eating that steamed with salt, but the supermarket stuff is good in risotto. I also make a good cream of asparagus soup.

It grows wild in Eastern Washington too. It's considered a weed by many.East Texas Parrothead wrote:We're lucky to have friends with gobs of it growing wild ... each spring, I steam it, sautee it, bake it .... BEG ... I've never thought of frying it ... mmmm ... may try that next year!

Deep fried asparagus is unbelievably awesome. The stuff at the festival is legendary...they have the most windows in asparagus alley (more than half) and always have lines. We go through more than 40,000 lbs of just deep fried asparagus alone during the 3 day festival.East Texas Parrothead wrote:We're lucky to have friends with gobs of it growing wild ... each spring, I steam it, sautee it, bake it .... It always pains me when asparagus season is over here...it's so fresh and cheap and nothing else compares. I checked some out in the store the other day, it was from Peru and almost $5 a lb!
