I keep my brats simple.
Maybe some brown mustard. A good brat should have enough flavor to stand alone.
Hot dogs, I love Chicago style, but at home, I usually put cheese, relish, mustard, and bbq sauce.

Brats: Plain, nothing to detract from the flavor of a good brat
