OMG - Got the basics for this from a little magazine at the checkout line in the grocery store, and I adjusted/added a few ingredients. This was one of the best things I've ever made.
3 lbs. pork shoulder
1/2 package of taco seasoning
1 large can green enchilada sauce
1 large can red enchilada sauce
1/2 teaspoon ground black pepper
2 cloves garlic
2 habanero chili peppers, diced
Put all ingredients in crock pot on high for 4 hours. Turn to low for 4 hours.
Shred pork and return to broth for an additional 20 minutes. Serve on buns with shredded cheese if desired.

sounds wonderful, but I don't have a crockpot anymore.
Guess I could cook it slow in the oven

Sounds good, I planed on buying a crock pot but this sound too good to pass up.

So is this nice and carnita style? I'd love to come up with a pork stuffing for our burritos instead of using beef all the time. I'm not a big fan of chicking but I love pig!!

Carnitas are big (5 lb or so) hunks of pork that are deep fried in lard then pulled apart. This is more of a faux BBQ pork. Sounds yummy.

Yup, what Corey said.. it's a shredded pulled pork, not hunks.

But it's reallly tasty. I made it again a few weeks ago.
