leaving about 1/2 inch clear on each side
roll the whole thing up and seal each side as best as you can.
Place it in a long baking dish I use a glass pan

Bake it at the time and temp you would your normal meatloaf.
I'm telling you this is damn good.
Yep. It sure was, Don!! :D

I always 'doctor' recipies :oops: so I had 1 lb each of pork, hamburger and the Italian sausage. I also added a little garlic and onion powder, Italian seasonings, and pepper. Then about 1 1/4 C of breadcrumbs and 3 eggs.

AWESOME!!!! :D

we were watching some "wacky weddings" show today, and the groom's cake was a meatloaf, and instead of icing they used mashed potatoes. Brilliant! :D

OMG. I SOOOOO have to make my own gluten-free Italian breadcrumbs. Hubby will go NUTS for this.

Must be a meat loaf kind of day - it is 37 here - so super cold by NC standards and meat loaf is great cold weather food. I made my Grandmother's "meal in a meatloaf" tonight with lots of editorial license.

1.5 lean ground beef (or turkey)
3 small eggs
1 c oatmeal
tomato sauce (I used only 1/2 can - probably should have used more :-? )
garlic - 4 cloves or more!
small onion grated
red and green peppers chopped (~1/4 of each type of pepper)
1 zucchini grated finely
3 small carrots grated finely
1 potato finely grated
2 celery stalks diced
mushrooms chopped
handful of fresh parsley chopped

Mix everything together and put in pan - bake at 375 for 50 minutes.

I never cook with salt but I think a little (as the original recipe says) would have made it tastier.

No pictures here though... oh well.
And raccoons brought wine and the mice they brought cheese...

Glad you liked it Penny. I doctor recipes too.
I do use garlic powder and Italian seasonings, but forgot to include them in the recipe. :oops:

Yum. That looks like it would make some insane leftover sandwiches the next day, on some nice crusty Italian bread.
