Rum Cream

We bought some of this in Jamaica.....I googled and found a few recipes and finally bastardized a few of them and came up with my own.....it's like Bailey's....except w/rum and BETTER!!

1 fifth dark rum (I used appletons, of course)
8 oz heavy cream
2 cans sweetened condensed milk
6 oz high quality chocolate (I used milk chocolate, but dark would be good too)
4 oz of caramel syrup (the coffee flavoring kind)
1 1/2T instant coffee
1T vanilla
1/2 t cinnamon

Simmer cream in a heavy pot, add chocolate and stir until chocolate is completely melted.
Remove from heat, add sweetened condensed milk, caramel syrup, instant coffee, vanilla and cinnamon.
Emulsify in the blender, then add rum and stir well.
Store in a glass bottle in the refrigerator.......
This is great in coffee, or just over ice.....

I love Rum Cream, we bought Sangers when we were there, yummmmmmmmmmmmmmmm.

Recipe sounds good, will give it a go....

It was the sanger's I fell in love with.....this is a little stronger, but very similar!

I just booked my trip to Jamaica yesterday so I will be buying more Rum Cream..... I haven't had any in 4 years!!!!

We fell in love with Crisma Carribean Rum Cream, but haven't been able to get it for awhile. :-?

Will definitely try your recipe!

You know, every recipe I've found for rum cream has been coconut milk based- I'll have to try this!

I've tried a few rum creams and have settled on Castries as my go-to brands. It's from St. Lucia and is available at most good spirits shops. Good stuff!!

Try this....it's pretty close....stronger.....but that's not a bad thing!

Popping this BTT because I just made a batch!

I made a smaller batch this time....maybe not a great idea.....it probably won't last long!

Cruzan is now making a really great rum cream too. It available in most liquor stores, as most Cruzan products seem to be.
