Mexican Lasagna

2 lbs of ground beef
½ small yellow onion, diced
1 package taco seasoning mix
2 cans Rotel
8 – 10 inch flour tortillas
1 small jar of taco sauce (not salsa)
4 cups Monterey Jack/Cheddar cheese

Brown beef with onions, drain. Add the taco mix, taco sauce, and Rotel. Simmer for 30 minutes. Use a 9 x 14 pan (spray with Pam), layer 4 of the tortillas. Add ½ of the meat mixture, cover with cheese (2 cups), repeat layering.

Bake at 400 for 20 minutes. Serve with sour cream and/or salsa.

Perfect! I have some ground turkey I can use. Can I substitute corn tortillas for the flour?

:D Sure! I make another casserole with corn. Both good, just a different flavor. :D
