Cuban Mojo Pork

This is one of my favorite recipes. :D It's a great combination of sweet, spicy, and citrus...awesome on pork but also makes for some kick ass shrimp on the barbie!

Cuban Mojo Sauce:
3/4 cup fresh orange juice
2 T. fresh lime juice
1 T. garlic, minced
1 t. kosher salt (to taste, personally I leave out the salt)
1 serrano or habanero chile, seeded, minced
2 T. honey
1 T. olive oil
1 T. paprika
1 T. chili powder
1 T. dried oregano
1/2 t. red pepper flakes

Optional ingredients/twists:
Substitute orange-pineapple juice for added sweetness.

A splash of rum adds a little bit of "authentic" Cuban flavor. :wink: :lol:

Combine and mix all ingredients in food processor/blender, marinate meat as long as you like for flavor (longer means stronger flavor/spiciness), grill to perfection and enjoy. 8)

Yum! Sounds delicious and easy. Two of my favorite adjectives.

Yes and yes and it is one of those recipes that is so easy but tastes so good it will impress the hell out of guests and make them think you spent all day pouring over gourmet cookbooks, watching the Cooking Channel and sweating in the kitchen. :wink: :lol: Throw together a box of Zatarain's Caribbean rice for an easy side dish or maybe some fried plantains or chips and mango salsa....it's all good. 8)

Can never have too many mojo recipes. Luv me some Cuban roast (or smoked) pork.
Left overs are great on some Cuban bread*, with swiss and pressed, panini style.

*Publix sub rolls are awesome as well.
Hoist up the mainsail...add a little BAM to the ginger ale...
